dal baati churma.also known as Wheat Roll and Churma, is a traditional Rajasthani dish made from powdered wheat, also known as Dal. It is usually served for lunch or dinner with crushed baati topped with ghee and dal. It is also popular in the Malwa regions of Uttar Pradesh and Madhya Pradesh.
Perhaps one of the oldest regional Indian dishes that comes from the cuisine of Rajasthan. Mixed Dal Curry, Baked Wheat Balls, and Mixed Wheat Ball Powder are the three components of this dish. Usually, it is served for lunch when the weather is extremely cold.
to be honest, i am not particularly fond of dal baati recipe as i find it very filling and heavy. but this is my family members favorite recipe, and they got the taste from my friend from rajasthan who makes it a lot. I actually got this recipe from her family, and I sincerely appreciate it. but as the traditional baati recipe is made in oven, i have added an appe pan twist to this recipe. as it is easily available in many households, i find the appe pan recipe more realistic and practical. Also, Indian cooking can be used to prepare Baati. While this can be equally efficient, the process can be time consuming.
While applying the dough for Baati, first of all keep in mind that it should be hard and tough. You can accomplish this by adding small amounts of water little by little while kneading the dough. secondly, use ghee to make dal baati churma. Ghee, which enhances the taste and flavor of dal baati, traditionally plays an important role in the recipe. last but not the least, the lentils used in the dal recipe for this dish include moong dal, masoor dal and chana dal. however, it can also be served with a straight dal recipe if none of these dals are combined.

Ingredients of Dal Baati Churma:-
For Baati:
2 cups wheat flour
¼ tsp salt
¼ tsp baking powder
¼ cup ghee
water for kneading
For Churma:
3 bati fried
2 tbsp ghee
3 tbsp sugar powder
2 tbsp chopped cashews and almonds
¼ tsp cardamom powder
For Dal:
½ cup green moong dal
¼ cup masoor dal
¼ cup chana dal (soaked 30 minutes)
3 cups water
3 tsp ghee
1 tsp mustard seeds
1 tsp cumin
2 pinch hing
1 finely chopped onion
1 tsp ginger garlic paste
1 green chilli slit from the center
1 finely chopped tomato
¼ tsp turmeric
½ tsp Kashmiri red chili powder
¼ tsp garam masala
1 tsp salt
1 cup water
2 tbsp coriander
